<p>The harvesting time is the most important time which will upon it the taste of the olive<br />
oil will depends. Our early harvest starts from the early October to November to the<br />
late winter . Thanks to the hot Tunisian summer and fall the olives ripen quickly,<br />
resulting in a narrow window for optimum picking .Its is worth to mention that the<br />
olives Fruit maturation depends among other things on olive variety, temperature,<br />
sunlight, and irrigation. Our picking crew who are the local farmers use a eco -friendly<br />
equipment to make sure neither the tree nor the fruit are harmed add to that the<br />
milling capacity is scheduled so that the olives don’t have to wait after being<br />
harvested.</p>
<p>Our press is located within the Olive Field so that we can afford to press our hand harvested olive the same day (at around 8pm same day). Crushing olive during the night is ideal to keep the quality of the Oil as it is preserved from the sun’s light and heat.</p>

Most of the Olive Trees we use to get our Oil are aged at around 100 years. Some have more than 500 years even 1000 years old, and have been giving the Best Olive Oil  to many generations.</p>

<p style="text-align: left;">In some countries the industrialization, the course to productivity is making the Olive Tree sector 100% industrialized, to the detriment of Good Quality. The best example is Spanish Olive Oil, the largest producer in Volume but in terms of quality specialists may not rank it as the best Country to produce Olive Oil. In Tunisia where our Olive Oil is produced, the process remains natural and Olives are harvested by Hand which is the best way for the Tree. The way olives are harvested in Spain or Italy shakes the tree with violence and stresses it for a better productivity, but a stressed Tree does not give you the Best Olive Oil.</p>
<p style="text-align: left;">Just like a stressed cow won’t give you the Best meat. OlivoilO respects the nature; and the nature will give it back to you. We respect the Olive Tree and it gives us back one of the Best Olives and Olive Oil in the world.</p>

<p style="text-align: left;">Once man and women harvest the olives; by the hands, we store the olives in large bags made out of Jute Textile garment. We store them in a dark and dry environment, protected from the heat of the sunand from the humidity of the air. We do it immediately, thus to fight against Olive Oil Biggest enemies : Light, Air, and Heat.</p>
<h2 style="text-align: left;">&gt; Same day Crush (6 hours after harvest) :</h2>
<p style="text-align: left;">Olive oil specialists recognize that the Best Olive Oil in the world are obtained by crushing Fresh Olives that have been kindly protected from Light, Air and Heat. This is why OlivoilO makes sure that its Olives that have been harvested and carefully stored, are crushed the same day. Usually workers pick up olives from 8am to 6pm. We can start selecting the best olives, and cold crushing them at 8pm, same day. Crushing fom 8pm until early morning 4am, preserves the oil from the Sun light and heat. This is crucial to obtain a Premium Olive Oil. We can afford this because of the organization of our process, and the proximity of our Press to the Olive Fields (miles away).</p>

We use Dark Glass bottles, or Metallic tin that will preserve the oil from the Sun light, the Heat and the air and humidity. Other olive oils are bottled in transparent glass or PET bottles is very bad for the oil as it lets the heat and the light go through and damage the oil. 										<content:encoded><![CDATA[<p><strong>Our Organic olives</strong> have been documented by an accredited organic certifying agency <strong>USDA</strong> to be grown without the use of chemical fertilizers, pesticides, or other artificial agents. This means that to be organic, the olives can’t use any chemicals or pesticides to help them grow. The olive trees in general are a very hearty tree. They require little to no pesticide intervention to grow olives .</p>
<p><strong>Our Growers</strong>, don’t use any chemicals on any of their trees. However, the organic certifying process documents and guarantees this fact for consumers. Meanwhile, many of our costumers wonder what the differences are between our Organic Extra Virgin Olive Oil, and Oil. The right answer is no ,they are the exact same oil since there are both under the same grade which is the 3 extra virgin olive oil. These two are made from the 1st cold press .They got also the same requirement of acidity, chemical make up and sensory tests the primary difference is that one is produced using Certified Organic olives, and the other is not.</p>

<h4>Organic Extra Virgin Vs. Extra Virgin Olive Oil</h4>
<p>Many consumers wonder what the differences are between <a href="http://www.centrafoods.com/products/oils/organic-extra-virgin" target="_blank" rel="noopener">Organic Extra Virgin Olive Oil</a>, and <a href="http://www.centrafoods.com/products/oils/extra-virgin" target="_blank" rel="noopener">Extra Virgin Olive Oil</a>. The difference in price is reasonably large between these two types of oil, but are they really all that different?</p>
<p>The simplest answer is no, they should be almost the exact same oil. Because they’re both the olive oil grade “Extra Virgin” they <a href="http://www.centrafoods.com/blog/bid/323449/What-Does-First-Cold-Press-Mean-In-Relation-to-Olive-Oil" target="_blank" rel="noopener">both are made from the first press (or spin) of the olives</a>. They both have the same requirements for acidity, chemical make up and sensory tests that allow them to be called Extra Virgin. The primary difference is that one is produced using Certified Organic olives, and the other is not.</p>
<h4>Organic Extra Virgin Vs. Other Olive Oil Grades</h4>
<p>As you begin to look at some of the other grades, this answer varies.  While the olives may be similar to what is used to produce Extra Virgin Olive Oil, the process of how the oil is made and the final quality of the oil is different.  For example, grades like Pure Olive Oil and Refined Olive Oil are processed using a high heat process.  <a href="http://www.centrafoods.com/blog/bid/320626/Olive-Pomace-Oil-Defined-and-Demystified" target="_blank" rel="noopener">Olive Pomace Oil is extracted</a> using a solvent to expel the oil.  Those oils also have different chemical requirements, which means that the final result of the oil may be very different in color, taste, etc.</p>
<p>While Organic Extra Virgin and Extra Virgin remain very similar, the quality gap between Organic EVOO and the other grades can be much wider.</p>
<h4>What’s The Difference In How The Olives Are Grown?</h4>
